These were the recipes my dad left us when he died. You can try them if you like, but if you end up with bad guts.....dont blame me!!!!

Canadian Whiskey

2 lb Wheat
2 lb Raisins
1 Lemon
4 Oranges
3 lb Sugar
1 oz Yeast
5 Qts Water <10 pints>
1 Tablespoon of freshly made tea

Boil half of the water with half of the sugar for 1 min. Pour the solution over the wheat and raisins. Put into a fermentation vessel and squeeze in the juice of 1 lemon. Cut up the oranges and the peel, then add these to the solution. Using your hands, squeeze and massage the oranges to extract the juice, oils and flavours from the oranges. When the solution cools down, add the yeast. Ferment the solution for 10 days. After fermentation, remove the solids by straining. Put the liquor into a gallon jar and add the tea. Boil the rest of the sugar and water for 1 min. When the water is cool, add to the liquor. Cover, and fit a fermentation lock. Leave the solution to ferment fully.....Enjoy

Braverys Own Scotch

1.5 lb Wheat
1.5 lb Raisins
4 Oranges
3.5 lb Sugar
1 oz Yeast
9 Pints of water
1 Tablespoon of fresh tea

Wash and clean the wheat and raisins, and place into a fermentation vessel. Slice the oranges and peel, and place these into the vessel. Boil half the sugar in 6 pts of water for 2 mins and pour over the contents of the vessel. Mix well, trying to squash the oranges and leave to cool. Add the yeast, cover and ferment for 7 days, stirring each day. Strain and wring the solids, getting all the liquor out. Put the liquor into a gallon jar with the tea. Boil the rest of the water (3 pints) with the sugar for 2 mins. When the water is cool add to the liquor. Cover and fit a fermentation lock. Leave the liquor until fermentation ceases ......Enjoy

Raisin Wine

3 lb Raisins
3 Lemons
2 lb Sugar
9 Pints of water
1 oz Yeast
1 Tablespoon of tea

Put the raisins, sliced lemons and tea into a fermentation vessel. Boil the sugar and water for a few mins and add the boiling water to the solids. When the solution is cool, add the yeast. Ferment for 14 days stirring daily, being careful not to add any impurities. After the fermentation period is over, strain the solution and wring dry. Put the liquid into a gallon jar, cover and fit a fermentation lock. Leave the liquor until fermentation ceases.....Enjoy
